Banh Bot Loc
I am Vietnamese raised with Chinese blood. My parents grew up in Vietnam, escaped during the infamous Vietnam War and brought the their culture overseas.
One of my favorite Vietnamese dishes is called Banh Bot Loc.
Banh Bot Loc is a Vietnamese specialty that I eat on rare occasions. It is rare because the dish is not on a typical menu. In fact, this particular meal was catered through my mothers friend.
The flour used to cover the pork and shrimp filling is from tapioca. When cooked, the dumpling becomes clear and translucent. What sets this dish apart from the other Asian dumplings is its sticky and chewy texture.
Each dumpling is wrapped and steamed in banana leaf. After steaming the dish, you peel it and dip it into the Vietnamese fish Sauce.
