Bun Bo Hue
Bun Bo Hue is a popular hot and spicy soup in central Vietnam (Hue) containing rice vermicelli (bun) and beef (bo).
The broth is prepared by beef bones, beef shank, lemongrass and seasoned with fermented shrimp paste, sugar and chili oil.
In this dish, we have thin slices of marinated and boiled beef shank, pig's knuckles, congealed pig blood, crab, shrimp, Vietnamese version of spam, diced green onions and chunks of tomato.
This is my personal choice for a rainy day. You can find this in most Vietnamese restuarants.
